EU food labelling: the 14 regulated allergens
What changed, why it matters for restaurants, and a printable reference from Fudoli
May 13, 2026
EU ruless require clear information for consumers on substances or products causing allergies or intolerances that are used in food. For prepacked food, the list appears in the ingredients; for non-prepacked food (including many restaurant dishes), the information must still be available and must not mislead the guest.
Annex II to Regulation (EU) No 1169/2011 names 14 groups that must always be emphasised when present (for example in bold in the ingredients list on packaging). The full list is displayed on the PDF downloadable below.
Fudoli is built so guests can filter and understand these categories on your digital menu. To support teams who still want a single printable sheet for the back office or training, we are publishing a short reference PDF that summarises the 14 categories in plain language.
